The origin of the legendary “Thieves Vinegar” can be traced back to the bubonic plague outbreaks which struck Marseilles in 1347, 1580 and 1720. During the first of these, it is estimated that up to 60% of European citizens may have perished. Yet, unperturbed by the risk of contagion, a group of audacious thieves took this opportunity to raid the houses of those who had fled the cities or simply steal any valuable possessions from the dead bodies which littered the streets and burial sites.
When they were finally apprehended for these crimes, the local authorities offered leniency in punishment in exchange for the method by which the thieves had apparently protected themselves. Their secret was revealed to be an infusion of antibacterial, antiviral and immune-modulating herbs, which had been steeped in vinegar. Variations of this formula have circulated ever since as a folk medicine prophylactic. Typically, the ingredients will include: rosemary, sage, thyme, lavender, and garlic. In some preparations, wormwood, rue, meadowsweet, cloves, horehound, and camphor were also used.
As the world, once again, faces a time of fear and medical uncertainty, we are reintroducing a specialised version of this ancient immunity tonic. Taking advantage of modern scientific research, we have added to the traditional ingredients: elderberries, which have been determined by various researchers (including the virologist, Dr Madeleine Mumcuoglu, and a team of chemical and biomedical engineers at the University of Sydney) to inhibit the entry and replication of flu viruses in human cells, whilst also strengthening immune response; high pressure aqueous extracts of star anise and pine needles, which contain shikimic acid (the molecular foundation from which the antiviral drug, Tamiflu, is synthesised); and a synergistic blend of turmeric root (with black pepper to enhance absorption), ginger and juniper berries for their wide array of antioxidant, anti-inflammatory, antibacterial, anti-fungal, anticancer, and cardio-protective properties. Using proprietary techniques, we then amplify the subtle wave emissions of these herbs to maximise their potency as they steep in organic apple cider vinegar for several weeks. The final infusion is then blended with raw, organic honey to create a therapeutic tonic or elixir, known to the ancients as an “oxymel”.

On Mount Halkidik – Greece, grow beautiful pine trees – which produce a spectacular award winning honey. The Great Taste judges said of the flavour: ‘Dark and sultry, this honey has the deep caramel sweetness of dates and the aroma of pine needles and leather. The texture is rich and syrupy….The overall flavour fades in sweetness and almost becomes savoury….with a herbaceousness that persists…. a sophisticated honey to be savoured.”
